Jello Pudding Cake
This is by far my favorite summertime cake, it is refreshing, and goes well with any fruit or berries on top.
Serves 16-20 Bake at 350 degrees
1 box of yellow cake mix
1 large box of strawberry jello
1 large box of instant vanilla pudding
1 container of Cool Whip
Prepare cake mix according to directions on the box. Pour into a 13×9-inch greased and floured cake pan. Bake at 350 for 35 mins or as cake box directs (watch cake to avoid browning edges). While the cake is baking, prepare the jello. Use only 3 cups of water instead of the normal 4. Boil 2 cups of water add the jello mix and stir until dissolved add final cup of cold water. Using a large fork, poke holes over the entire top of the cake. Carefully pour all the prepared jello mixture over the cake. Put the cake in the refrigerator to start cooling. Chill for a few hours or until the jello has set. Prepare the instant vanilla pudding as directed on the box. Pour the pudding over the top of the cake. Finally, spread the Cool Whip over the pudding. Add any fruit to the top. I use strawberries, blueberries etc. I have used lemon jello and added kiwi on the top as another variation. I usually prepare the cake and jello the evening before and chill overnight. The next day it’s just the pudding and cool whip that need to be added. Bon Appetite!
